Outrageous Conch Fritters

3/4 lb conch - (must tenderize by pounding)

1 onion

1 bell pepper

1/2 tsp. salt

1/2 tsp. fresh ground pepper

pinch hot pepper flakes

1 tsp. baking powder

1/2 cup sifted flour

1 egg

Canola oil to deep fry

Grind conch (or buy it that way:) Finely chop onions and bell pepper. Stir together dries ingredients. Add Conch and onion mixture and egg. Mix with your hand to form small fritter balls. Refrigerate for at least one hour. Heat oil at 350 degrees and fry until golden in color. Drain off extra fat on paper towell. Serve with horseradish sauce, mustard sauce or favorite seafood sauce.
